I have a couple favorite dishes from Whole Foods, and this is one of them. Their cauliflower salad is so light and delicious, with little pops of sweet raisins. I love it.
1 head cauliflower
1 medium yellow or white onion, sliced
2/3 cup raisins
1 tbs yellow curry powder
2tbs butter (I used MELT® Organic)
2 tbs olive oil
1 cup water
Preheat your oven to 375 degrees. Cut up your cauliflower into medium sized florets and place in a baking dish. Add around 1tsp salt and the cup water. Roast in the oven for about 40 minutes, or until tender.
Place the raisins in a bowl and soak with hot water to help them regain their plumpness. Next, add the olive oil to the pan and toss in the onions. Cook until tender, about 5 minutes.
When the onions have cooked, add the butter (MELT® Organic) and curry powder. Mix well together. Add the raisins. Incorporate everything.
Once the cauliflower is done, drain any excess water. Add the curry and onion mixture, thoroughly tossing around to coat the cauliflower.
You can eat the meal hot as a sidedish, or the way I prefer it which is as a cold salad. Once you have mixed everything together, allow the dish to come to room temperature and then place it in the fridge. I like it sitting a day before I dig in. Enjoy!
